Here is a salad with two of my most favorite ingredients, strawberries and Parma ham. It’s a wonderful combination enhanced with an unusual kiwi and lime dressing, all the better for devouring in the summer sun!

Patriotic cheesecake

Here is a delicious chilled cheesecake that is flavoured with ginger and orange, but could be equally made for variety with different sugar-free jello and different flavoured yogurt (e.g. berry delicious using a raspberry jello and strawberry yogurt). One of our favourites is a banana and toffee version using orange jello, toffee yogurt and a sliced banana topping. For this celebratory Independence Day, why not top the cheesecake with fresh berries to look like the US flag?

Pink lady apple, chicory, and pecan salad

Bitter chicory works superbly well with the crunchy sweet apple and nutty pecans in this delicious salad. The creamy sesame seed dressing is made using tahini but if you can’t find it then you could use Dijon mustard instead.

Protein ice cream

This is one of those recipes that just happened and materialised because I just didn’t want to ditch those overly-sweet protein drink powders I had purchased at not inconsiderable expense. What seems too sweet at room temperature miraculously doesn’t when frozen … so a drink became an ice cream! An ice cream maker will make light work of this recipe but isn’t essential. Try it once and be prepared to become hooked! The nutritional guideline given has been calculated using Syntrax Nectar protein drink … my current favourite. The pic shows ice cream made with Fuzzy Navel flavour.
