Most commercial coleslaw has been made with high-fat mayonnaise and has a liberal sprinkling of sugar to enhance the flavor; it’s far better therefore to make your own. And while you’re at it, why not try a few different ingredients like radishes instead of cabbage to ring the changes? This version is terrific with barbecue fare but is also good in a wrap or with a selection of cold deli meats.

Nothing sings out summer more than white-fleshed peaches that grow abundantly in Italy. This easy and deliciously quick to make recipe makes the most of them with a filling of creamy quark mixed with crushed ratafia biscuits. You could substitute low-fat ricotta if preferred. When not in season replace with canned peaches in natural juice.

Roast Turkey with a Couscous and Apricot Stuffing

For so many years I have cooked my grandmother’s turkey recipe with a rich sausage meat and sage stuffing, and it has been very well received (the scales told me so!). Now I have re-visited this holiday favorite and looked at how I can lighten the stuffing and avoid the pound gain. Here is the result … try it, you won’t miss the fat-kick and will appreciate the flavor without gain!

Roasted Stuffed Peppers/Capsicums with Parma Ham

Thinly sliced Parma ham, an Italian favorite, can be used to make such delicious meals. Here it tops tasty peppers that are stuffed with couscous, spring onions/scallions, cherry tomatoes and parsley. You could use other vegetables instead of peppers – try large mushrooms, hollowed-out beef tomatoes or courgettes/zucchini instead. For extra flavor and protein, you could always add a little crumbled or cubed cheese to the stuffing mixture.

Roasted vegetables with Halloumi cheese

With the remaining vegetables from my Farmer’s Market haul I made a colourful roasted dish that was packed with seasonal flavour. The protein is boosted by adding Halloumi cheese. This is a traditional Cypriot cheese that is popular in the Middle East and Greece. Made from a mixture of goat’s and sheep’s milk it has a high melting point so is perfect for grilling or, as here, roasting. You will find it in many Middle-eastern, Greek, Cypriot or Lebanese stores. We all enjoyed it as a Mother’s Day supper dish.

Royal Wedding cupcakes

It is said that the Royal couple will have two wedding cakes. One being a traditional iced fruit cake and the second a chocolate biscuit cake that Prince William has adored every since he was introduced to it by Her Majesty the Queen. I’ve tried to make the latter, a rich tea biscuit, meringue, candied fruit and melted chocolate concoction, bariatric-friendly, but I’m afraid, even with sugar-free chocolate, it still comes out way too high in fat and sugar. So here is another of William’s favorites, cupcakes with a cream cheese frosting instead. This one scores on all levels…so something to wave the flags at!
