Thai chicken and vegetable soup

This is a chicken soup, flavoured with Thai ingredients, which is enriched and thickened with vegetables. It is an all-time favourite that freezes beautifully both chunky and smooth, I prefer the latter. High in protein, low in fat and sugars it is the perfect nutritious light lunch dish or starter. It was one of the first pureed dishes I tried after surgery and really hit the spot after bland-tasting liquids. If you are pre-surgery, why not make a batch and freeze away for those early post-surgery days when you may not feel like cooking.

With all the classic Thai flavors of lemongrass, lime and coconut, this chicken-based soup is a meal in itself. Don’t be put off by the long list of ingredients … the resulting flavorsome soup is well worth the effort. For the early soft and pureed stage of eating (what I call the Amber stage at www.bariatriccookery.com) this soup can be processed in a blender before serving.

Just the thing to entice the taste buds, Thai fish cakes make a wonderful appetizer and good introduction to a Thai-style meal. Almost any kind of white fish fillets (or shellfish) can be used and can make a main meal dish if accompanied with a grated Thai cucumber salad (grated cucumber seasoned with fish sauce, lime juice, chillies and sliced shallots).

This rice noodle and prawn/shrimp salad has all the fresh flavours of Thai cuisine. For added crunch add mixed baby salad leaves with Thai basil if you can locate it, and don’t pass on baby coriander/cilantro and amaranth to finish … it will give the dish a truly authentic taste.

Here is a refreshing fruit smoothie that is made with the tangy flavors of pineapple, mango and tropical fruit juice. The cooling addition of a small scoop of low-fat and low-sugar ice cream really hits the spot when the mercury rises. You could substitute the ice cream used here for home-made vanilla protein ice cream to get some added protein and nutrition.

Turkey Bolognese

All over Italy each and every family has its own favorite bolognese recipe … handed down over the generations. Served with pasta, it is staple fare and usually made with beef or a mixture of pork and beef. This version is particularly weight-loss surgery friendly because it uses high protein and lower saturated fat turkey mince and is just as flavorsome. It is a very popular recipe from my Return to Slender bariatric cook book.

Tuscan Ham and Borlotti Bean Soup

The Italians make many a fine soup … think minestrone, using tomatoes, vegetables, pasta or rice. Here is a different one but just as flavorsome using canned beans, ham and shredded cabbage. You can use other canned beans and legumes like butterbeans, chickpeas or kidney beans, but borlotti beans give an authentic taste. A little grated Parmesan over the top and a little crusty bread (if you can tolerate it) makes this a filling one-pot meal.
