Breakfast & Brunch

Egg and avocado wrap

I use low-carb and sometimes whole wheat and seeded wraps rather than big fluffy white ones for best nutrition and tolerability ... and you have a much wider selection in the US than we have in the UK. Again this recipe serves 4 but can be reduced easily ... but will be popular in the school or office lunchbox of everyone!

Egg White Omelette with Ricotta and Roasted Peppers

This is a delicious recipe for 1 (or maybe 2 if you’re still only used to very small portions). It makes a wonderful brunch, light lunch or easy supper dish when dining alone.
French-Style Lentils with Eggs

French-Style Lentils with Eggs

This is one of those store cupboard and refrigerator standbys that fits the bill on so many occasions. It’s great for brunch/lunch at the weekend; will provide a quickly cooked family supper mid-week and would even cut-the-mustard for a retro dinner party meal when relaxed dining is the mantra.
Greek Yogurt with Honey, Fruit and Seeds

Greek Yogurt with Honey, Fruit and Seeds

This is such a typical Greek dish showcasing some of the best ingredients from Greece. Greek yogurt, used here, is sweetened with a drizzle of honey and served with a few fresh berries (although you could use fresh quartered figs). I have served this with a dusting of mixed nuts and seeds but a few toasted almonds will also suffice. I like to flavor the fruits with just the smallest amount of fresh thyme leaves for an authentic flavor. Serve for breakfast, as an indulgent snack or pudding.
Spanish Omelette
  • Time: 35 to 40 minutes

Spanish Omelette

This Spanish omelette is endlessly versatile. Serve warm at the weekend for a lazy Sunday brunch; with salad as a light mid-week entertaining lunch (perhaps in the garden); chilled and then cut into wedges for the lunchbox; or cut into small triangles as the perfect tapas style nibble.
Strawberry Soufflé Omelette
  • Time: 10 minutes

Strawberry Soufflé Omelette

This wonderfully light omelette rounds off a meal perfectly but would also make a delicious and nutritious breakfast dish on a summer’s morning.
Super Crunchy Muesli

Super Crunchy Muesli

Here is a really good muesli base that you can vary by topping with different fruits. The mixture is baked to make it really crunchy and will remind you to take your time and chew very carefully over breakfast. Try it plain with a little milk or natural yogurt or top with seasonal fruits like berries, sliced banana or stewed apple.
