Avocado Toast | I didn’t get the appeal. Now don’t get me wrong, I LOVE, LOVE, LOVE avocado in guacamole with a crunchy tortilla chip.
But I wasn’t feeling it for breakfast. On a girl’s weekend, with the insistence of my “ever so on-trend'”18-year old niece Katie, I decided to jump in with both feet by making a variety of avocado toasts to taste test. “My Girls” were all in. Here’s how it went:
1. Plain with salt & pepper and a squeeze of lime.
This was the first one we tried. It was simple and easy, super creamy and a thumbs up.
2. Cherry tomatoes with basil, balsamic vinegar and salt & pepper.
This one didn’t feel like breakfast. It felt like light lunch or even an afternoon appetizer. It was good but it felt odd eating it in the morning.
